Ingredients
- 2 tsp. vegetable oil
- 1 cup chopped onion
- 1 cup sliced mushrooms
- 2 cups cooked, cubed chicken breast
- 2 cups frozen peas and carrots
- 2 cups egg noodles
- 2 cups low-sodium chicken broth
- ½ tsp. garlic powder
- ¼ tsp. thyme
- 1 bay leaf
- Pepper to taste
Directions
- Heat vegetable oil in large nonstick skillet over medium-high heat. Sauté chopped onion and mushrooms until soft (5-6 minutes).
- Add remaining ingredients and bring to a boil. Lower heat and cover pan. Simmer until noodles are tender (8-10 minutes).
