Chestnut Stuffing

Perfect for a holiday or any day, this rich stuffing makes a delightful stand alone dish or replacement for stuffing in any traditional setting. Keep in mind when you buy this that chestnuts are extremely perishable, so purchase them as close as possible to the date you intent to use them.

Ingredients

  • 1 Tbsp. canola oil
  • ⅓ cup onions, diced
  • 2 cloves garlic, minced
  • 2 cups shelled and roasted chestnuts, chopped
  • 1¼ cups low sodium vegetable broth, divided
  • 1 tart apple, diced
  • ¼ cup Parmesan cheese
  • 4 slices whole-wheat bread, toasted and cubed

Directions

  1. Preheat the oven to 350º F.
  2. Heat the oil in a medium-sized saute pan. Add the onion and garlic and continue to cook until soft.
  3. Stir in the chestnuts and 1/2 cup of broth and let simmer until liquid is reduced by half.
  4. Turn off heat and stir in diced apple, cheese, toasted bread, and remaining broth. Add more broth if it seems dry.
  5. Bake until golden brown on top, about 20-25 minutes.
