Blackening chicken is first and foremost about the spices, and this spice mix is fantastic. Mix up more than you need for an easy way to season any protein for a flavorful main course.
Ingredients
- ½ tsp. paprika
- ⅛ tsp. salt
- ¼ tsp. cayenne pepper
- ¼ tsp. cumin
- ¼ tsp. thyme
- ⅛ tsp. pepper
- ⅛ tsp. onion powder
- 2 boneless, skinless chicken breasts
- 2 tsp. vegetable oil
Directions
- Preheat oven to 350ºF. Mix together spices and rub one side of chicken breasts with mixture.
- Heat oil in a heavy-bottomed skillet over high heat. Place chicken in hot pan, seasoned side down, and sear to brown (1 minute). Turn and repeat.
- Place breasts on a lightly greased cookie sheet. Bake until chicken reaches a minimum internal temperature of 165ºF (10-15 minutes).
