Ingredients
- 4 russet potatoes
- 4 cups frozen mixed vegetables
- 1¼ cups fat-free sour cream
- ½ tsp. oregano
- ½ tsp. basil (or 1 tsp. of favorite no salt seasoning)
- ¼ tsp. salt
- Pepper to taste
Directions
- Pierce each potato several times with a fork. Microwave on high until tender (4-5 minutes per potato).
- While potatoes are cooking, steam mixed vegetables according to package directions.
- Mix the sour cream with the herbs, salt, and pepper.
- Split the potato in the center and fill with steamed veggies. Top with herbed sour cream and serve hot.
