Asian Avocado & Pink Grapefruit Salad

You’ll love the way this Asian-inspired dressing will play with the creamy nuttiness of avocado and the bright, puckery notes of grapefruit. Pairs beautifully with tofu, fish, and chicken.

Tip: If you don’t keep a spice grinder in your house, you can wrap the coriander seeds in tinfoil or a plastic bag, and beat the packet with something heavy, like a hammer or cast iron pan, to crack the seeds.

Ingredients

  • Dressing:

    • Juice of 1 pink grapefruit
    • 2 Tbsp. olive oil
    • 1 Tbsp. minced shallot
    • 1 tsp. low sodium soy sauce
    • ½ tsp. honey
    • ¼ tsp. sesame oil
    • 1 tsp. grated peeled fresh ginger
    • 1 tsp. coriander seeds, cracked

    Salad:

    • 2 cups mixed baby greens
    • 1 pink grapefruit, peeled and sliced
    • 1 avocado, sliced

Directions

  1. Whisk together dressing ingredients.
  2. Toss greens with dressing and top with grapefruit and avocado.
