A stir fry that’s as delicious as it is simple, you’ll love how little active time you need to spend at the stove to pull this meal together. If you’ve got other veggies in need of using up, toss ’em in. Stir fries are great for using up odds and ends.
Ingredients
- 2 cups brown rice
- 2 tsp. canola oil
- 3 cups broccoli
- 2 garlic cloves, minced
- ½ cup sliced green onion
- 2 large eggs
- 2 Tbsp. low sodium soy sauce
- ½ tsp. chili powder
- ½ tsp. garlic powder
Directions
- Cook rice according to package directions.
- When rice is almost done cooking, heat oil in a large skillet over medium-high heat. Add broccoli and sauté until tender (3-5 minutes).
- Add garlic and green onions and sauté until golden brown (2 minutes).
- Add eggs to the center of the pan and scramble (3-4 minutes).
- Stir in seasonings. Serve hot over brown rice.
