Warm rice salad is amazing with perfectly cooked basmati rice. The fragrant and delicate texture works perfectly with the rich sweetness of sun-dried tomatoes, the earthy umami of feta cheese, and the crisp finishing note of mint.
Ingredients
- 2 sun-dried tomatoes, packed without oil
- ¼ cup hot water
- 1¼ cups uncooked basmati rice
- 2 cups water
- ⅔ cup (2½ oz.) feta cheese, crumbled
- ½ tsp. salt
- 2 Tbsp. dried currants
- 2 Tbsp. chopped fresh mint
- 1 Tbsp. olive oil
- ¼ tsp. black pepper
- 2 Tbsp. pine nuts, toasted
Directions
- Combine sun-dried tomatoes and hot water in a small bowl; let stand (10 minutes). Drain and chop; set aside.
- Cook rice according to package directions and cool.
- Spoon rice into a bowl and fluff with a fork. Stir in tomatoes, feta, and next 5 ingredients (through pepper); toss well to combine. Sprinkle with pine nuts.
