Parmesan-Thyme Mushrooms

Mushrooms compete with meat for satiety, making them a brilliant choice for vegetarian main courses or sides to cut down on the meat on your plate. These particular mushrooms are bursting with flavor provided by fresh herbs, cheese, and a hint of wine.

Tip: To make these a main course, reduce the number of servings.

Ingredients

  • 3 Tbsp. olive oil
  • 2 lbs. cremini mushrooms, quartered
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 3 cloves garlic, minced
  • ⅓ cup dry white wine
  • 1 Tbsp. fresh thyme
  • ½ cup Parmesan, grated

Directions

  1. Heat the oil in a large skillet over high heat. Add mushrooms and sear until the bottoms are well-browned (2-3 minutes).
  2. Season with the salt and pepper and cook, stirring once or twice, until the mushrooms are browned all over (5-6 minutes).
  3. Add the garlic and cook until fragrant (1 minute). Pour in the wine and stir, scraping up the browned bits.
  4. Cook until the wine has mostly evaporated (1-2 minutes). Remove from the heat and stir in the thyme and cheese.
