Mushrooms compete with meat for satiety, making them a brilliant choice for vegetarian main courses or sides to cut down on the meat on your plate. These particular mushrooms are bursting with flavor provided by fresh herbs, cheese, and a hint of wine.
Tip: To make these a main course, reduce the number of servings.
Ingredients
- 3 Tbsp. olive oil
- 2 lbs. cremini mushrooms, quartered
- ¼ tsp. salt
- ¼ tsp. pepper
- 3 cloves garlic, minced
- ⅓ cup dry white wine
- 1 Tbsp. fresh thyme
- ½ cup Parmesan, grated
Directions
- Heat the oil in a large skillet over high heat. Add mushrooms and sear until the bottoms are well-browned (2-3 minutes).
- Season with the salt and pepper and cook, stirring once or twice, until the mushrooms are browned all over (5-6 minutes).
- Add the garlic and cook until fragrant (1 minute). Pour in the wine and stir, scraping up the browned bits.
- Cook until the wine has mostly evaporated (1-2 minutes). Remove from the heat and stir in the thyme and cheese.
