Kidney Bean Pasta Sauce

This hearty bean-based sauce can be served over your favorite pasta or used as a topping for a sloppy joe.

Ingredients

  • 1 med. onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz.) can no-salt-added kidney beans
  • 2 T. balsamic vinegar
  • 2 T. tomato paste
  • 1/2 t. smoked paprika
  • 1/2 t. cayenne pepper
  • 1 t. dried oregano

Directions

  1. Add onion and garlic to a large skillet with a few tablespoons of water. Cook until translucent.
  2. Add beans, balsamic vinegar, tomato paste, paprika, cayenne and oregano. Cook for 5-10 minutes. Add a bit more water if too thick. Mash beans to desired texture.
