Ingredients
Vinaigrette:

- 1" fresh ginger, peeled and grated

Salad:
- 1 cup quinoa
- 2 scallions, sliced
- 1 small red onion, chopped
- 1 bell pepper, chopped
- 1 large cucumber, chopped
- 1 avocado, chopped
Directions
