Ingredients
- 1 (15 oz.) can no-salt-added chickpeas, drained
- 2 cloves garlic, peeled
- 3 Tbsp. chopped chives
- 3 cups baby spinach leaves
- Zest and juice of 2 small lemons
- ¼ cup extra virgin olive oil
- ¼ tsp. salt
- ⅛ tsp. cayenne pepper
Directions
- Combine the chickpeas, garlic cloves and chives in a food processor and pulse to roughly combine.
- Add the spinach and lemon. Puree until smooth. Drizzle in the olive oil to reach desired texture and season with salt and cayenne pepper.
