Blackened Chicken For Two

Blackening chicken is first and foremost about the spices, and this spice mix is fantastic. Mix up more than you need for an easy way to season any protein for a flavorful main course.

Ingredients

  • ½ tsp. paprika
  • ⅛ tsp. salt
  • ¼ tsp. cayenne pepper
  • ¼ tsp. cumin
  • ¼ tsp. thyme
  • ⅛ tsp. pepper
  • ⅛ tsp. onion powder
  • 2 boneless, skinless chicken breasts
  • 2 tsp. vegetable oil

Directions

  1. Preheat oven to 350ºF. Mix together spices and rub one side of chicken breasts with mixture.
  2. Heat oil in a heavy-bottomed skillet over high heat. Place chicken in hot pan, seasoned side down, and sear to brown (1 minute). Turn and repeat.
  3. Place breasts on a lightly greased cookie sheet. Bake until chicken reaches a minimum internal temperature of 165ºF (10-15 minutes).
