Spinach boosts the nutritional quality of this hummus while adding another dimension to the flavor. The lemon balances the sharp spiciness of the garlic and chives.

  • 1 (15 oz.) can no-salt-added chickpeas, drained
  • 2 cloves garlic, peeled
  • 3 Tbsp. chopped chives
  • 3 cups baby spinach leaves
  • Zest and juice of 2 small lemons
  • ¼ cup extra virgin olive oil
  • ¼ tsp. salt
  • ⅛ tsp. cayenne pepper

  1. Combine the chickpeas, garlic cloves and chives in a food processor and pulse to roughly combine.
  2. Add the spinach and lemon. Puree until smooth. Drizzle in the olive oil to reach desired texture and season with salt and cayenne pepper.
