Creamy Vegan Gravy

Ingredients

  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tsp. poultry seasoning, or more to taste
  • 1 Tbsp. Miso
  • 2 Tbsp. Nutritional Yeast
  • 1 Tbsp. low-sodium soy sauce
  • 1 cup low-sodium vegetable broth
  • 1 (15 oz.) can no-salt added cannellini beans, rinsed and drained
  • ⅛ tsp. ground pepper
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • ⅛ tsp. nutmeg, optional
  • 1 tsp. Whole Grain Dijon Mustard

Directions

  1. Heat a nonstick pan over medium heat. Cook the onion until browned, adding water if it starts to stick (5 minutes).
  2. Add garlic, poultry seasoning, miso, and nutritional yeast. Cook for another 30 seconds until fragrant.
  3. Add soy sauce, low sodium vegetable broth, and beans to the pan and bring to a light boil.
  4. Remove from heat and transfer to a blender. Add black pepper, onion powder, garlic powder, nutmeg, and Dijon mustard. Blend until smooth. If your gravy is too thick add more vegetable broth.

There is often a story that brings them to this challenging and highly rewarding work. There is a common theme that runs through them all, which is their devotion to their work, their deep love for their animals, their connection to their soil, and the pride they share in being able to nourish their community. I’ve always walked away from a farm tour with a sense of awe as to how they do it, and of course, a deep appreciation that they do.
