This variation on mashed potatoes is a great side dish to complement any meal. If you like a little bite to your potatoes, a little horseradish paste is a wonderful addition to garlic for pumping up the spice in this dish.
Ingredients
- 8 cups cauliflower florets
- 4 cloves garlic, crushed
- ⅓ cup low-fat buttermilk
- 4 tsp. olive oil, divided
- 1 tsp. butter
- ½ tsp. salt

Optional Garnishes*:
- Fresh chives, chopped
Directions
- Place cauliflower florets and garlic in a steamer basket over boiling water, cover and steam until soft (12-15 minutes).
- Place the cooked cauliflower and garlic in a food processor. Add buttermilk, 2 teaspoons oil, butter, salt, and pepper. Process until smooth and creamy.
- Serve drizzled with remaining 2 teaspoons oil and garnish with chives, if desired. Serve hot.
