Chicken marinara is a well-loved dish, and it doesn’t need much modification to make it a nutritious dinner option. The key to flavor with no added sugar is a long, slow simmer time, so plan this for a day when you can do a little meal prepping while the sauce bubbles away in the background.
Ingredients
- 2 Tbsp. olive oil
- 5 cloves garlic, minced
- 1 lb. boneless, skinless chicken breasts, cubed
- 1 cup sliced button mushrooms
- 1 onion, chopped
- 3 Tbsp. tomato paste
- 2 (28 oz.) cans diced tomatoes
- 1 Tbsp. basil
- 1¾ cup water
- ¼ cup red wine
- 16 oz. angel hair pasta
- ¼ cup grated Parmesan cheese
Directions
- Heat 1 tablespoon oil in a large skillet over medium. Sauté garlic until lightly browned (1 minute).
- Cook chicken, mushrooms, and onion in same skillet with remaining 1 tablespoon olive oil until chicken is cooked through and mushrooms have released their liquid (8-10 minutes).
- Stir in tomato paste. Add crushed tomatoes, basil, and water. Bring to a simmer, cover, and simmer for 30 minutes, stirring occasionally.
- Stir in wine, cover, and continue simmering for another 30 minutes.
- During last fifteen minutes of simmering time, cook pasta according to package directions.
- Serve pasta topped with sauce and cheese.
