Ingredients
Dressing:
- ¼ tsp. salt
- 1 clove garlic, minced
- ¼ cup orange juice
- 2 Tbsp. olive oil
- ⅛ tsp. red pepper flakes
- 1 Tbsp. rice wine vinegar
Salad:
- 1 cup black rice
- 1 grapefruit, peeled and chopped
- 1 avocado, peeled and diced
- 2 green onions, chopped
- Pepper to taste
Directions
- Whisk together dressing ingredients and set aside.
- Cook the rice according to package directions.
- Once the rice is cooked, transfer it to a medium-size bowl and toss with the dressing. Gently stir in grapefruit, avocado, and green onion. Season with pepper to taste.
