Asian Spinach Salad with Orange & Avocado.

Simple and refreshing, this tasty salad is easy to make. It will be at its best in the winter, when citrus is at its finest, making it a lovely choice for ringing in the new year.

Ingredients

  • Dressing:

    • 1½ tsp. reduced sodium soy sauce
    • 2 Tbsp. finely chopped shallots
    • 2 Tbsp. seasoned rice vinegar
    • 1 Tbsp. vegetable oil
    • 2 tsp. minced peeled fresh ginger
    • ¼ tsp. sesame oil

    Salad:

    • 1 navel orange, peeled
    • 1 (6 oz.) bag baby spinach
    • 1 avocado, sliced

Directions

  1. Whisk together dressing ingredients.
  2. Slice orange into ¼” rounds and crosswise in half.
  3. Toss spinach with dressing to coat. Serve topped with orange and avocado.
