Ingredients
- 1 cup wild rice, rinsed
- 2 tsp. olive oil
- 1 red onion, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1½ tsp. cumin
- ½ cup diced dried apricots
- ½ cup orange juice
- ¼ tsp. salt
- Pepper to taste
- ⅔ cup sliced scallions
- ⅓ cup chopped pistachios
Directions
- Cook rice according to package directions (45-50 minutes).
- A few minutes before the rice is done, heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring often, until softened (2-3 minutes).
- Add bell pepper, garlic, and cumin. Cook until garlic is golden (1 minute).
- Add apricots, orange juice, salt, and pepper. Simmer until the apricots have plumped and the liquid has reduced slightly (1-2 minutes).
- Remove from the heat and stir in rice and scallions. Serve topped with pistachios.
