Popovers always add a “wow” factor to any meal, and we all could use a little more “wow” in our lives. Be sure not to skip preheating the pan: a hot pan ensures that steam is formed and the batter rises and pops overs the muffin cups.

Ingredients

  • 1 cup fat-free milk
  • 1 cup flour
  • ¼ tsp. salt
  • 4 egg whites

Directions

  1. Preheat oven to 425ºF and move the rack to the upper third of the oven.
  2. Coat a large, 6-muffin baking tin with cooking spray. Heat the muffin tin in the oven for 2 minutes.
  3. In a large bowl, beat together all ingredients until smooth. Fill the heated muffin molds two-thirds full. Bake in the top part of the oven until golden brown and puffy (25-30 minutes).
