Blueberry Mint & Cucumber Salad with Feta

This is the ultimate taste of summer. Fresh blueberries paired with cucumber and mint from the garden and accented with local feta make a knock-out side to add to any cookout.

Ingredients

  • 2 Tbsp. olive oil
  • 2 Tbsp. white wine vinegar
  • 3 cups blueberries
  • 2 cucumbers, sliced
  • 3 scallions, thinly sliced
  • ½ cup crumbled feta
  • 1 heart of romaine, chopped
  • 2 cups lightly packed mint leaves
