Cauliflower “steaks” are delicate, so leave the stem intact to help them hang together and handle gently at all stages. We’ve recommended a shawarma spice blend, but the lovely thing about cauliflower is that it plays well with all manner of spices. Use any salt-free spice mix you enjoy.
Ingredients
- 1 head cauliflower, rinsed, green leaves removed and sliced thick
- 1 Tbsp. olive oil
- ¼ tsp. salt
- 1 tsp. maple syrup
- 2½ tsp. shawarma spice blend
Directions
- Preheat oven to 400ºF.
- Place cauliflower slices on a baking sheet and rub with oil, salt, maple syrup and shawarma spice blend.
- Bake until tender and browned, 20-25 minutes, flipping carefully halfway through.
