Make Ahead Steel-Cut Oatmeal

Start this oatmeal about eight hours before you want to eat it. Dress it up with fresh or frozen fruit and a tablespoon or so of nuts to round out the meal.

Ingredients

  • 1 tsp. olive oil
  • 1 cup steel-cut oats
  • 3 cups water
  • Pinch salt
  • 1 cup skim milk

Directions

  1. Heat oil in a medium saucepan set over medium heat. Add the oats and fry them until they start smelling nutty.
  2. Stir in the water and salt. Bring to a boil.
  3. Turn off the heat and cover the pan. Leave it on the stove overnight.
  4. In the morning, uncover and stir in the milk. Bring back up to a simmer over medium heat.
