Winter Squash Gratin

Winter squash is sweet and lovely. Baked to perfection and topped with a crust of breadcrumbs, it’s the perfect side for any family dinner…up to and including a holiday feast.

Tip: For Thanksgiving, you could prep everything but the breadcrumbs a day or two in advance, refrigerating until ready to bake.

Ingredients

  • 3 lbs. winter squash, peeled and thinly sliced
  • 4 cloves garlic, minced
  • ½ cup chopped fresh parsley
  • 1 Tbsp. fresh thyme
  • 1 tsp. salt
  • Pepper to taste
  • 3 Tbsp. olive oil
  • ¼ cup breadcrumbs

Directions

  1. Preheat oven to 375ºF. Coat a 3-quart baking dish with cooking spray.
  2. Toss together all of the ingredients except breadcrumbs. Spread evenly in baking dish and top with breadcrumbs.
  3. Bake until squash is tender (1-2 hours). Serve hot.
