Wild Rice with Dried Fruit and Walnuts

Enjoy your whole grains to the fullest with this elegant rice pilaf-style side. Pairs beautifully with oven-roasted chicken breast or pork tenderloin. Add in a salad of massaged greens for a complete meal that will be welcomed at the most elegant dinner table or a simple weeknight family supper.

Tip: To toast the nuts, place in a dry skillet over low heat and toast until just fragrant (2-3 minutes).

Ingredients

  • ½ cup wild rice
  • 1 Tbsp. olive oil
  • ¼ onion
  • ½ carrot, peeled
  • ½ stalk celery
  • 2 tsp. finely chopped scallions
  • 1 apple, peeled and diced
  • 1½ Tbsp. raisins
  • 1 tsp. chopped fresh parsley
  • 1 tsp. red wine vinegar
  • 2 tsp. finely chopped shallots
  • ½ tsp. salt
  • Pepper, to taste
  • 1½ Tbsp. chopped walnuts, toasted

Directions

  1. Cook rice according to package directions.
  2. While rice cooks, heat oil in a small pan over medium heat. Cook onion, carrot, and celery until tender (6-8 minutes). Set aside.
  3. When rice is done, fluff with a fork and gently stir in all ingredients.
