Sweet, exotic mango complements spicy chili to bring an enticing depth of flavor to a simple quesadilla. Avocado and black bean bring healthful fat and protein to the dish for a meal that will keep you satisfied.
Ingredients
- 1½ cups sliced onion
- ½ tsp. oregano
- ¼ tsp. salt
- ⅛ tsp. pepper
- 1 poblano chili, chopped
- 1 (15 oz.) can black beans, rinsed and drained
- 1 mango, sliced
- 1 avocado, sliced
- 4 (8") fat-free flour tortillas
- ½ cup shredded reduced-fat sharp cheddar cheese
Directions
- Spray a large skillet with cooking spray and heat over medium-high. Sauté onion, oregano, salt, pepper, and poblano until onion is tender (3-5 minutes).
- Add beans and cook until heated (1 minute). Remove from heat and stir in mango and avocado.
- Place tortillas on a baking sheet coated with cooking spray. Divide filling between tortillas, sprinkle with cheese, and fold in half. Lightly coat tortillas with cooking spray.
- Set the broiler to high and place the rack in the top position. Broil, flipping once, until cheese melts and both sides are golden (2-3 minutes per side).
