Spanish Cauliflower

Cauliflower cooked with tomatoes, onion, and simple spices is a humble-yet-delicious side dish that’s perfect to pair with any simple entree.

Ingredients

  • 1 head cauliflower, chopped into 2" pieces
  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • ¼ tsp. garlic powder
  • 2 large tomatoes, chopped
  • ½ tsp. pepper
  • 1 Tbsp. parsley
  • ¼ cup grated Parmesan cheese

Directions

  1. Cover cauliflower with 1″ of water in a saucepan and bring to a boil over medium heat. Cook until just tender (3-5 minutes). Drain.
  2. Heat oil in a large skillet over medium heat. Add onion and cook until tender (3-5 minutes).
  3. Add the garlic powder and cooked cauliflower to skillet. Stir until browned (2-3 minutes). Stir in the tomatoes and black pepper and cook until heated through (4-5 minutes).
  4. Sprinkle with parsley and cheese to serve.
