Ingredients
- 3 plums, pitted and chopped
- ½ cup golden raisins
- 2 tsp. minced fresh ginger
- 1 small onion, chopped
- 2 Tbsp. cider vinegar
- ¼ tsp. cinnamon
- ¼ tsp. curry powder
- ½ tsp. salt
- ½ tsp. pepper
- 3 lbs. boneless pork loin, fat removed
- ¾ lb. green beans, trimmed
- 1 Tbsp. cornstarch
- 1 Tbsp. water

Instructions
- In slow cooker, combine plums, raisins, ginger, onion, vinegar, and spices. Mix gently to combine.
- Place pork on the mixture and cook on HIGH for 4 hours or on LOW for 6 hours.
- In the last 25 minutes of cooking, add green beans to the slow cooker.
- When the green beans are tender, remove pork and green beans from the cooker.
- Whisk together cornstarch and water and slowly whisk into the slow cooker. Cook until the sauce thickens (2-3 minutes). Serve pork slices with green beans and drizzled with sauce.
