Red Lentil Dhal

Dip your toes into the water of traditional Indian cuisine with this easy dhal. Serve hot over brown rice or quinoa, or serve with whole-grain naan.


  • 5-6 cups water
  • 2½ cups red lentils
  • 2 Tbsp. curry paste
  • ½ cup lite coconut milk
  • ⅓ cup water
  • 2 tsp. salt
  • ¼ tsp. black pepper
  • ¼ tsp. cayenne
  • 2 tsp. curry powder
  • ½ tsp. turmeric
  • 1 tsp. chili powder
  • 2 Tbsp. sugar
  • lime juice, to taste


  1. Bring the water to a boil in a large pot. Add lentils and cook uncovered for 10 minutes, stirring to prevent burning.
  2. Stir in remaining ingredients until thoroughly combined and heated through. Serve over brown rice or quinoa.
