Ingredients
- 5-6 cups water
- 2½ cups red lentils
- 2 Tbsp. curry paste
- ½ cup lite coconut milk
- ⅓ cup water
- 2 tsp. salt
- ¼ tsp. black pepper
- ¼ tsp. cayenne
- 2 tsp. curry powder
- ½ tsp. turmeric
- 1 tsp. chili powder
- 2 Tbsp. sugar
- lime juice, to taste
Directions
- Bring the water to a boil in a large pot. Add lentils and cook uncovered for 10 minutes, stirring to prevent burning.
- Stir in remaining ingredients until thoroughly combined and heated through. Serve over brown rice or quinoa.
