Ingredients

  • 2 pounds lean pork, cubed in small pieces
  • 1/2 cup water
  • 2 cloves garlic, chopped
  • 1 onion, chopped
  • 1 cup diced tomatillos
  • 1 teaspoon ground coriander
  • 4 ounce can chopped mild green chilies
  • 2 tablespoons chopped fresh cilantro
  • 1-2 fresh jalapeno peppers, finely diced, to taste
  • Dash salt and pepper

Instructions

  1. In a large saucepan, combine pork, water, and garlic. Cook until all the water is absorbed; continue cooking and let the pork brown for a few minutes. Add onion and sauté until translucent. Add tomatillos and canned green chilies. Add chopped fresh jalapenos, a little at a time, to taste.
  2. Cover and simmer for 30–40 minutes or until the pork is tender. Just before serving, add chopped cilantro, salt, and pepper to taste. Serve with warm flour tortillas, fat-free sour cream, and poblano pico de gallo.
