Ingredients
- 4 cloves garlic, minced
- 1 Tbsp. minced ginger
- 1 Tbsp. tandoori spice blend
- Juice of 1 lemon
- ¼ tsp. salt
- ½ cup plain, non-fat yogurt
- 1 head cauliflower, broken into florets
Directions
- Mash garlic and ginger into a paste. Stir in the tandoori spice, lemon, and salt. Fold in the yogurt.
- Toss cauliflower with yogurt mix and place in fridge to marinate (1-12 hours).
- When ready to cook, preheat oven to 400ºF. Roast cauliflower until tender (45-60 minutes).
