Indian Roasted Cauliflower

Let vegetables shine as the main course for your next dinner. This easy marinated and roasted cauliflower is packed with flavor and will revolutionize the way your family enjoys cauliflower.

Ingredients

  • 4 cloves garlic, minced
  • 1 Tbsp. minced ginger
  • 1 Tbsp. tandoori spice blend
  • Juice of 1 lemon
  • ¼ tsp. salt
  • ½ cup plain, non-fat yogurt
  • 1 head cauliflower, broken into florets

Directions

  1. Mash garlic and ginger into a paste. Stir in the tandoori spice, lemon, and salt. Fold in the yogurt.
  2. Toss cauliflower with yogurt mix and place in fridge to marinate (1-12 hours).
  3. When ready to cook, preheat oven to 400ºF. Roast cauliflower until tender (45-60 minutes).
