Grilled Summer Veggies

If your grill is only ever filled with meat, you’re missing out on some amazing flavors. Lightly marinated vegetables are their best when slightly charred on a grill.

Ingredients

  • Vegetables:

    • 1 zucchini, sliced
    • 1 yellow summer squash, sliced
    • 1 medium eggplant, sliced
    • ¼ cup chopped green onion

    Marinade:

    • 1 Tbsp. olive oil
    • 3 Tbsp. balsamic vinegar
    • 2 cloves garlic, crushed
    • Pepper to taste

Directions

  1. Place the zucchini, squash, and eggplant in a large bowl.
  2. Whisk together marinade ingredients and pour over vegetables. Let sit for 30 minutes.
  3. Heat a grill to a medium-hot heat. Place the veggies on, brushing with extra marinade as needed. Cook until seared brown and tender, flipping once (2-3 minutes per side).
  4. Serve hot, garnished with green onions.
