Grilled Mango Chicken

Chicken and mango, mango and chicken—is there a better combination for the grill in the summertime? Serve this dish up with a side of brown rice and some beautifully kebabed summer veggies for a colorful, flavorful al fresco meal.

Ingredients

  • 4 (4 oz.) boneless, skinless chicken breast cutlets
  • 2 Tbsp. mango chutney or salsa
  • 2 Tbsp. fresh lime juice
  • ½ tsp. ginger
  • 1 Tbsp. olive oil
  • ¼ cup orange juice
  • 1 tsp. minced fresh oregano
  • ½ tsp. hot pepper sauce
  • 2 garlic cloves, minced

Directions

  1. Place chicken in a sealable storage bag.
  2. Whisk together remaining ingredients and pour over chicken. Marinate in fridge, turning once or twice (1-8 hours).
  3. Preheat grill to medium-high. Place chicken on grill, discarding excess marinade. Grill chicken until it reaches a minimum internal temperature of 165ºF (4-6 minutes per side).
