This fresh dish uses grilling to bring out the best flavor and texture in eggplants. Topped with a simple tomato salad, this is a light summer side that will be welcome at any picnic table.
Ingredients
Tomato Topping:
- 3 cups diced tomatoes
- 1 Tbsp. minced garlic
- ½ cup sliced fresh basil
- ¼ tsp. crushed red pepper flakes
- 2 Tbsp. olive oil
Grilled Eggplant:
- 2 medium eggplants, sliced into ½" rounds
- 1 Tbsp. olive oil
- ¼ tsp. salt
- ¼ tsp. pepper
- ½ lb. low-fat mozzarella cheese, sliced
Directions
- Preheat grill to medium-high.
- Toss all topping ingredients together.
- Brush eggplant generously with olive oil on both sides. Season with salt and pepper. Grill eggplant slices, covered, until eggplant is well-browned on one side (3-4 minutes). Flip slices and top each with one slice of mozzarella. Cover and grill until cheese is melted and eggplant is tender (3-4 minutes).
- Transfer eggplant to a serving platter and top with tomato mixture.
