Cookie Dough Banana Bites

Chickpeas serves as the base for this deceptively healthy and lightly sweet snack that will hit your craving for sugar while providing you with some filling protein and fiber at the same time. For a little added decadence, stir a few mini chocolate chips into the “dough” after it’s smooth.

  • 1 (15 oz.) can no-salt-added chickpeas, rinsed and drained
  • ¼ cup almond butter
  • ¼ cup unsweetened almond milk
  • 5 dates, pitted
  • 2 Tbsp. coconut oil, melted
  • 3 tsp. ground chia seeds
  • Pinch of sea salt, adjust to taste
  • 2 tsp. vanilla extract
  • 2-3 bananas, sliced and frozen

  1. In a food processor, combine all ingredients except bananas. Process until smooth.
  2. Lay banana slices on a baking sheet and spoon a little of the mixture onto each one.
  3. Freeze until “dough” is solid, then transfer to a freezer bag.
