Turn that garden bounty into a refreshing and lovely meal by using cucumbers as a serving base for a delightful bruschetta-like topping.

Tip: This recipe will look fresher made with white balsamic vinegar, but if you don’t have any on hand, regular balsamic will taste just as good.
Ingredients
- 1 cup finely chopped tomatoes
- 1 cup finely chopped zucchini
- ½ cup corn
- ¼ cup shredded carrot
- 3 Tbsp. sliced fresh basil
- ¼ cup grated parmesan cheese
- 1 clove garlic, minced
- ¼ cup balsamic vinegar
- 2 large cucumbers, halved lengthwise and seeded
- 4 Kalamata olives, sliced
Directions
- Mix all ingredients except for the cucumbers and olives in a bowl.
- Fill the cucumbers with the bruschetta and top with sliced olives to serve.
