Summer Pea, Watermelon & Farro Salad

If you love celebrating fresh, in-season ingredients, this salad is for you. The simple ingredients let the crisp sweetness of ripe watermelon and the bright tenderness of new peas shine through. Serve it up at your next picnic for a refreshing dish that can either take center stage for the vegetarians in your circle or play a strong supporter to white meat or fish for your omnivorous friends.

Ingredients

  • 1 cup farro
  • 1 cup peas
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 cup cubed watermelon
  • 1 cup chopped fresh parsley
  • ¼ cup shaved Pecorino Romano cheese

Directions

  1. Cook farro according to package directions. In the last 2 minutes of cooking, add peas. Drain and rinse  with cold water.
  2. Combine farro mixture with remaining ingredients, except cheese, and toss well to combine.
  3. Garnish with cheese to serve.
