Ingredients
Dressing:
- 3 Tbsp. olive oil
- 2 Tbsp. lemon juice
- 1 tsp. oregano
- Pepper to taste
Salad:
- 4 cups peeled and diced cucumbers
- 1 (14 oz.) can black-eyed peas, drained and rinsed
- ⅔ cup diced bell pepper
- 2 Tbsp. chopped black olives
- ¼ cup sliced red onion
- ½ cup crumbled feta cheese
Directions
- Whisk together dressing ingredients.
- Combine salad ingredients and toss with dressing to coat. This can be made 2-3 days ahead.
