Clementine Endive Salad.

The most unusual ingredient in this recipe is cocktail onions, which are sometimes sold as pickled onions, and they’re awesome for bringing a little extra flavor to a salad. Pair with salty olives, sweet clementines, and bitter endive and you get a luxurious salad.

Ingredients

  • Dressing:

    • 2 Tbsp. red wine vinegar
    • 1 tsp. sugar
    • ½ tsp. salt
    • ¼ cup olive oil

    Salad:

    • 1¾ lbs. clementines, peeled and segmented
    • 2 lbs. Belgian endives, chopped
    • 4 celery ribs, sliced
    • ½ cup Kalamata olives, chopped
    • 1 cup cocktail onions, quartered
    • ¾ cup loosely packed fresh parsley

Directions

  1. Whisk together dressing ingredients.
  2. Toss together salad ingredients.
  3. Serve salad with dressing on the side.
