Ingredients
- ½ tsp. crushed red pepper
- 1 tsp. coriander
- 2 tsp. cumin
- 2 cloves garlic, minced
- Juice of 1 lime
- 2 Tbsp. cider vinegar
- 2 Tbsp. seasoned rice vinegar
- ¾ cup chopped fresh cilantro
- 2 tomatoes, diced
- 1 (15 oz.) can corn, drained
- 2 bell peppers, seeded and diced
- ½ cup finely chopped red onion
- 2 (15 oz.) cans black beans, drained and rinsed
Directions
- Toss all ingredients together thoroughly. Refrigerate to let flavor combine (15 minutes to 24 hours).
