Simple and refreshing, this tasty salad is easy to make. It will be at its best in the winter, when citrus is at its finest, making it a lovely choice for ringing in the new year.
Ingredients
Dressing:
- 1½ tsp. reduced sodium soy sauce
- 2 Tbsp. finely chopped shallots
- 2 Tbsp. seasoned rice vinegar
- 1 Tbsp. vegetable oil
- 2 tsp. minced peeled fresh ginger
- ¼ tsp. sesame oil
Salad:
- 1 navel orange, peeled
- 1 (6 oz.) bag baby spinach
- 1 avocado, sliced
Directions
- Whisk together dressing ingredients.
- Slice orange into ¼” rounds and crosswise in half.
- Toss spinach with dressing to coat. Serve topped with orange and avocado.
