Asian Apple Chicken Salad

Mild chicken and sweet-tart apples are the perfect base for showcasing the favorite flavors of Asian dressings. The flavor is given further rich complexity with fresh herbs.

Ingredients

  • Dressing:

    • 1 Tbsp. grated ginger
    • 1 Tbsp. low-sodium soy sauce
    • 1 Tbsp. mirin
    • 1 Tbsp. sesame oil
    • 2 Tbsp. lime juice
    • 2 Tbsp. apple juice
    • Pepper to taste

    Salad:

    • 2 cups cubed cooked chicken breast
    • 2 cups chopped apples
    • 1 lb. baby spinach
    • 3 scallions, thinly sliced
    • ¼ cup chopped fresh cilantro
    • ¼ cup chopped fresh parsley

Directions

  1. Whisk together dressing ingredients.
  2. Toss salad ingredients together in a large bowl. Toss with dressing to serve.
