Roasted red peppers are rich and sweet and juicy–the perfect topping for a sauceless pizza. Paired with moist fresh mozzarella, this dish is a party for your mouth.

Ingredients

  • 3 red bell peppers
  • Pepper to taste
  • 1-2 garlic cloves, minced
  • 2 Tbsp. olive oil, divided
  • ½ recipe Whole Wheat Pizza Dough
  • 4 oz. fresh nonfat mozzarella, sliced thin
  • 1 oz. Parmesan, shaved
  • 2 Tbsp. slivered fresh basil

Directions

  1. Preheat oven to 450ºF.
  2. Place red peppers on a foil-lined baking sheet and roast, turning once or twice, until charred (25-30 minutes). Cover with foil and let rest until safe to handle (15 minutes).
  3. Peel the peppers, removing the seeds and membranes, and slice in thin strips. Toss with pepper to taste, garlic, and 1 tablespoon of the olive oil.
  4. Roll out the dough and place on a 12″ or 14″ pizza pan or large baking sheet. Brush all but the edge of the dough with remaining tablespoon of oil. Top with mozzarella and roasted peppers. Bake until crust is brown and cheese has melted (15-20 minutes).
  5. Sprinkle the shaved Parmesan and the basil over the top to  serve.
