If you’re looking for a delightful appetizer, this broiled zucchini with the tangy dill sauce will fit the bill.

Ingredients

  • ½ cup plain, non-fat Greek yogurt
  • 2 tsp. finely chopped fresh dill
  • 1 clove garlic, grated
  • ½ tsp. lemon juice
  • ⅛ tsp. kosher salt, divided
  • ¼ tsp. freshly ground black pepper, divided
  • 1 lb. zucchini
  • 1 Tbsp. olive oil

Directions

  1. Preheat broiler.
  2. In a small bowl, whisk together the yogurt, dill, garlic and lemon juice. If necessary, thin with water to a pourable consistency. Season with salt and pepper.
  3. Trim ends off zucchini. Cut in half crosswise, then cut each half lengthwise into spears. Toss with olive oil, salt and pepper.
  4. Place zucchini in an oven-proof skillet or pan and broil, flipping occasionally, until slightly charred and tender (10 minutes).
  5. Serve zucchini warm with chilled yogurt-dill sauce.
