Although the flavor unique to yellow chiles is wonderful in this simple stir-fry, feel free to substitute red if you can’t find yellow. For a stir-fry that’s more sweet than spicy, substitute a red bell pepper for the hot peppers.

Ingredients

  • 4 yellow chiles, chopped into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 3/4 pound boneless, skinless chicken breasts, thinly sliced
  • 4 large cloves garlic, peeled and minced
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1/4 cup low-sodium chicken broth
  • 1/2 teaspoon granulated sugar
  • 1/2 pound green beans, trimmed and cut into bite-size pieces
  • 5 lime leaves, torn
  • 1 cup brown rice, cooked

Directions

  1. Heat oil over medium-high heat. Add chicken, garlic, fish sauce, oyster sauce, chicken broth and sugar. Cook 2 to 3 minutes.
  2. When chicken is almost cooked, add beans, peppers and lime leaves. Cook until chicken is cooked through and vegetables have reached your preferred texture. Serve hot over warm rice.
