A dish to ignite all the senses–the colors, smells, taste and texture will be sure to satisfy. Get creative with your use of nuts and dried fruit! If you don’t have apricots and pistachios, go ahead and use what you do have–pecans and raisins, for example, would be another great option.

Ingredients

  • 1 cup wild rice, rinsed
  • 2 tsp. olive oil
  • 1 red onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1½ tsp. cumin
  • ½ cup diced dried apricots
  • ½ cup orange juice
  • ¼ tsp. salt
  • Pepper to taste
  • ⅔ cup sliced scallions
  • ⅓ cup chopped pistachios

Directions

  1. Cook rice according to package directions (45-50 minutes).
  2. A few minutes before the rice is done, heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring often, until softened (2-3 minutes).
  3. Add bell pepper, garlic, and cumin. Cook until garlic is golden (1 minute).
  4. Add apricots, orange juice, salt, and pepper. Simmer until the apricots have plumped and the liquid has reduced slightly (1-2 minutes).
  5. Remove from the heat and stir in rice and scallions. Serve topped with pistachios.
