Warm and delightfully herbed, this simple soup takes little time to make. It’s perfect to whip up from your pantry and what you have in the fridge.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely sliced
  • 1 stalk celery, diced
  • 6 medium cloves garlic, thinly sliced
  • 1 tablespoon fresh rosemary, chopped
  • 1 quart low-sodium vegetable stock
  • 1 bay leaf
  • 1 (15 ounce) can no-salt-added white beans, drained and rinsed
  • 1 bunch spinach, trimmed and washed
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Heat 2 tablespoons oil in a medium saucepan over. Add onions, celery, garlic, and rosemary.
  2. Cook, stirring frequently, until onions and garlic are soft. Add broth, bay leaves and beans.
  3. Bring to a boil, reduce to a simmer and cook for 10 minutes.
  4. Add spinach and cook until wilted. Season with salt and pepper. Stir in lemon juice.
