This hearty dish made with sausage and white beans is a quicker variation on classic, slow-stewed ragouts. Look for low-sodium canned beans.

Ingredients

  • 1 Tbsp. olive oil
  • ½ cup chopped onion
  • 2 (4 oz.) lean chicken sausage links, cut into (½") slices
  • 1 zucchini, quartered and cut into (½") slices (about 2 cups)
  • 3 garlic cloves, peeled and crushed
  • 6 cups chopped trimmed kale (about ½ lb.)
  • ½ cup water
  • 2 (16 oz.) cans cannellini beans or other white beans, rinsed and drained
  • 1 (14½ oz.) can diced tomatoes, undrained
  • ¼ tsp. salt
  • ¼ tsp. freshly ground black pepper

Directions

  1. Heat oil in a large skillet over medium-high heat. Sauté onion and sausage until sausage is browned (4 minutes).
  2. Add zucchini and garlic; cook (2 minutes).
  3. Add kale and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer until thoroughly heated (10 minutes). Serve immediately.
