With a sour burst of flavor and the rich earthy quality of toasted nuts, this crunchy salad will leave your mouth watering for more. If you struggle with seeding pomegranates, this video explains how to handle the job easily.

Tip: Watercress and pomegranate seeds may be hard to source at the same time. There’s no substitute for pomegranate seeds, but arugula would be a good substitute for watercress in this recipe.

Ingredients

Dressing:

  • 2 Tbsp. lime juice
  • 1½ tsp. sugar
  • ¾ tsp. salt
  • ¼ tsp. pepper
  • 5 Tbsp. olive oil

Salad:

  • 1¼ lb. green leaf lettuce, torn
  • ½ lb. watercress, trimmed or arugula
  • Seeds of 1 pomegranate
  • ¾ cup sliced almonds

Directions

  1. Preheat oven to 350ºF.
  2. Whisk together dressing ingredients.
  3. Toast nuts in a shallow baking pan until golden (3-5 minutes).
  4. Toss lettuce, watercress, and pomegranate seeds with dressing. Top with almonds to serve.
