Vichyssoise is a classic potato soup. Although it is traditionally served cold, it can also be eaten warm if that suits your preferences better.

Ingredients

  • 1 tsp. vegetable oil
  • 3 cups diced leeks (about 3 large)
  • 3 cups diced, peeled, baking potatoes (about 1¼ lb.)
  • 1 (16 oz.) can fat-free, low sodium vegetable broth
  • ⅔ cup evaporated skim milk
  • ¼ tsp. salt
  • ⅛ tsp. black pepper
  • 1 Tbsp. minced fresh chives

Directions

  1. Heat the vegetable oil in a large sauce-pan over medium-low heat. Add the diced leek; cover and cook until soft (10 minutes).
  2. Stir in the diced potato and broth, and bring to a boil. Cover the potato mixture, reduce heat, and simmer until the potato is tender (15 minutes).
  3. Place the potato mixture in a blender or food processor, and process until smooth.
  4. Place the potato mixture in a large bowl, and cool to room temperature. Stir in the evaporated skim milk, salt, and black pepper. Cover and chill. Sprinkle soup with minced chives.
